Ingredients

    1 pounds beef, lean ground, (at least 90% lean)
    1 large onion(s), chopped
    2 cup(s) mixed vegetables, frozen
    1 can(s) tomatoes, diced, with green pepper, celery and onions, undrained
    4 cup(s) water
    4 teaspoon bouillon, beef, beef bouillon granules
    1 1/2 teaspoon Italian seasoning, dried
    1/4 teaspoon pepper, black
    1 cup(s) cheese, mozzarella, part-skim, shredded

Recipe Tip:
Variation Make this soup your way with what's on hand. Use any frozen veggie, any variety of canned diced tomatoes, your favorite cheese and the herbs you like best.
Preparation
1.  In 4-quart saucepan or Dutch oven, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
2.  Stir in remaining ingredients except cheese. Heat to boiling; reduce heat. Simmer uncovered 6 to 8 minutes, stirring occasionally, until vegetables are tender.
3.  Sprinkle 2 tablespoons cheese in each of 8 soup bowls; fill bowls with soup.

Bone broth is known as a super food. The cooking process breaks down bones and connective tissues – including proteins, minerals and fat – that heal the body in various ways. And because bone broth comes from pure nature, it’s sometimes more beneficial than taking supplements, especially for people with severe digestive problems.

I have even started prescribing it to my patients who cannot digest supplements comfortably.  In this example, the immune system has become so hyper-vigilant in attacking gluten stressors, that it may also attack beneficial foods such as celery, navy beans and chicken. The body uses the collagen and other connective tissues in the broth to rebuild the damaged tissues like the intestinal lining. In this way, the bone broth heals the gut without irritating the body.What’s better than a hot bowl of homemade soup during a cold winter day? Almost every culture throughout history has used bone broth for its nutritional significance, versatility and overall deliciousness.

Ingredients
    1 tablespoon(s) olive oil
    3 ounce(s) thinly sliced prosciutto, chopped
    2 clove(s) garlic, crushed
    4 medium Idaho potatoes, peeled and cut into 1-inch cubes
    3 cup(s) chicken broth
    1/3 cup(s) chopped fresh basil, plus extra sprigs for garnish
    2 cup(s) half-and-half
    teaspoon(s) salt
    1/8 teaspoon(s) white pepper
    2 tablespoon(s) grated Parmesan cheese

Directions

    Heat olive oil in a large heavy saucepan over medium-high heat. Add prosciutto and sauté, stirring frequently, until crispy, about 5 to 7 minutes. Drain on paper towels; set aside.
    Add garlic, potatoes and broth to pan; bring to a boil and reduce heat to low. Cook for about 12 to 15 minutes, or until potatoes are soft, stirring occasionally. Add chopped basil and simmer for another few minutes.
    Remove from heat. If you have a hand blender, use it to purée soup in pot until smooth. Otherwise, transfer soup to blender in batches and purée; return to pan. Add half-and-half, salt, pepper and cheese. Cook on low for another few minutes, stirring, until hot and well blended.
    Ladle soup into bowls and sprinkle with the prosciutto. Garnish with basil sprigs.
Not only are sweet potatoes readily available, inexpensive, and delicious, they have many other benefits for your health.

4.  Sweet potatoes contain iron. Most people are aware that we need the mineral iron to have adequate energy, but iron plays other important roles in our body, including red and white blood cell production, resistance to stress, proper im­mune functioning, and the metabolizing of protein, among other things their rich orange color indicates that they are high in carotenoids like beta carotene and other carotenoids, which is the precursor to vitamin A in your body.  Carotenoids help strengthen our eyesight and boost our immunity to disease, they are powerful antioxidants that help ward off cancer and protect against the effects of aging. Studies at Harvard University of more than 124,000 people showed a 32 percent reduction in risk of lung cancer in people who consumed a variety of carotenoid-rich foods as part of their regular diet. Another study of women who had completed treatment for early stage breast cancer conducted by researchers at Women’s Healthy Eating and Living (WHEL) found that women with the highest blood concentrations of carotenoids had the least likelihood of cancer recurrence.

Ingredients
Original recipe

    1 (2 pound) butternut squash

    3 tablespoons unsalted butter

    1 onion, diced

    2 cloves garlic, minced

    2 teaspoons minced fresh ginger root

    1 tablespoon curry powder

    1 teaspoon salt

    4 cups reduced sodium chicken broth

    2 firm ripe Bartlett pears, peeled, cored, and cut into 1 inch dice

    1/2 cup half and half
Directions

    Preheat an oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with parchment paper.
    Cut squash in half lengthwise; discard seeds and membrane. Place squash halves, cut sides down, on the prepared baking sheet. Roast in preheated oven until very soft, about 45 minutes. Scoop the pulp from the peel, and reserve.
    Melt butter in a large soup pot over medium heat. Stir in the onion, garlic, ginger, curry powder, and salt. Cook and stir until the onion is soft, about 10 minutes. Pour the chicken broth into the pot, and bring to a boil. Stir in the pears and the reserved squash, and simmer until the pears are very soft, about 30 minutes.
    Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender. Puree in batches until smooth. Return the soup to the pot, stir in the half and half, and reheat.
1. Heat oil in saucepan over medium-low heat. Add leeks, and cook 10 minutes, or until soft, stirring often.
2. Add squash and pears, and sauté 5 minutes. Stir in vegetable broth, and bring to a boil. Reduce heat to medium-low, and add salt, if desired. Simmer 20 minutes, or until squash is fork-tender.
3. Remove from heat, and stir in coconut milk. Purée soup in batches in blender or food processor, or use immersion blender in saucepan; blend until smooth. Return soup to saucepan, and stir in thyme. Reheat over medium-low heat 2 to 3 minutes, or until warmed through. Season with salt and white pepper, if desired. Serve garnished with pumpkin seeds, if using.
Butternut squash are excellent sources of beta carotene, which your body turns into vitamin A. Beta carotene may help to prevent eye problems, such as dry eyes and night blindness. Squash also contain vitamin C, lutein and zeaxanthin, which may help keep you from getting cataracts or suffering from macular degeneration.Roasted butternut squash soup is usually made with butternut squash, onion cooked in butter or oil, chicken broth and spices. Some versions add other ingredients, such as potato, celery, carrot or apple. This type of broth-based soup is very nutritious as long as you limit the sodium and fat that you add, and it may have a number of health benefits as well.Butternut squash is also a good source of potassium, which helps lower your blood pressure. Potassium counteracts the effects of sodium, so consuming more potassium can help you lower your blood pressure if the sodium in your diet is too high, notes the 2005 Dietary Guidelines for Americans. Keeping your blood pressure within the ideal range helps lower your risk for heart disease.

Chinese Chicken Corn Soup is a ridiculously easy chinese soup recipe, but yet so nutritional. Ever since I moved to the South of China, I have started the habit of having chinese soups for every meal. Back home, we always used to have chinese soups at each meal, but somehow I lost that habit when I went to Beijing. In Beijing, meals are rarely taken with chinese soups, but here (South of China), soups are a MUST at every meal. Truth be told, I LOVE this habit! Chinese soups are delicious, healthy, nutritious and above all, so simple to make. It is really amazing how many delicious foods Chinese can make with so few ingredients!the nutritional benefits of chicken feet. Chicken feet make the best stock for soup. They contain glucosamine chondroitin, collagen and trace minerals. Some benefits of collagen include healthier, younger skin, and slows down arthritis. They are actually not that bad to eat, they just LOOK disgusting. But, in reality, they are more gelatinous in nature. Give it a try and you will see how delicious they can be! AND they are really good for your skin!
  Ingredients
    5 chicken feet
    2 Sweet Corn, cut into chunks
    4 slices of ginger
    salt
    sugar
Instructions

    Clean and wash the chicken feet. Cut off the tip of the chicken fingers.
    Next, scald the chicken feet. Put the chicken feet in a pot and bring to a boil until foam starts forming on top. Drain the chicken feet under cold water.
    In a clean pot, add the chicken feet, the maize, ginger and water until it covers the maize. Add 1 tsp salt and 1 tbsp sugar.
    Bring the soup to a boil and then lower the heat. Let the soup simmer for about 2 hours or until the soup turns yellow.
    Done! Enjoy your soup!
Tomato soup has long had a place on American tables, and with its smooth texture and rich taste, kids will love it too. It’s also healthy: Tomatoes aren’t considering a superfood for nothing. In addition to fiber, potassium, folate and vitamins K, E and B-6, the cooked tomatoes in the soup contain the antioxidant lycopene. Top it with some low-fat sour cream for extra creaminess.Enjoying a bowl of healthy soup on its own is fine, but sometimes you need a little more. You can pair your soup with a few different nutritious side dishes, like sandwiches made with whole-grain bread and lean turkey meat. Grilled vegetables offer another option, or try topping your soup with whole-wheat crackers or homemade croutons. Just bake day-old wheat bread that you’ve brushed with olive oil and seasoned with salt and pepper for about 15 minutes.Get your kids to eat their broccoli without complaining by combining it with cheese and potatoes to make broccoli cheese chowder. Chop 1 large onion, 2 stalks of celery and 1 large carrot, and saute them in 1 tablespoon of olive oil until soft. Add a chopped potato and a couple of minced garlic cloves. Add 1 tablespoon of flour and stir to combine. The flour will help thicken the soup. Add 2 cans of vegetable broth and 8 cups of broccoli crowns -- fresh or frozen. Cook until the potato and broccoli are soft. Transfer to a blender and puree until smooth. Return to the original pot and add in 1 cup of low-fat cheddar. Stir until the cheese melts and season to taste with salt. Each 1-cup serving of chowder has 205 calories, 9 grams of fat and is also a good source of calcium and vitamins A and C.
