Chinese Chicken Corn Soup is a ridiculously easy chinese soup recipe, but yet so nutritional. Ever since I moved to the South of China, I have started the habit of having chinese soups for every meal. Back home, we always used to have chinese soups at each meal, but somehow I lost that habit when I went to Beijing. In Beijing, meals are rarely taken with chinese soups, but here (South of China), soups are a MUST at every meal. Truth be told, I LOVE this habit! Chinese soups are delicious, healthy, nutritious and above all, so simple to make. It is really amazing how many delicious foods Chinese can make with so few ingredients!the nutritional benefits of chicken feet. Chicken feet make the best stock for soup. They contain glucosamine chondroitin, collagen and trace minerals. Some benefits of collagen include healthier, younger skin, and slows down arthritis. They are actually not that bad to eat, they just LOOK disgusting. But, in reality, they are more gelatinous in nature. Give it a try and you will see how delicious they can be! AND they are really good for your skin!
  Ingredients
    5 chicken feet
    2 Sweet Corn, cut into chunks
    4 slices of ginger
    salt
    sugar
Instructions

    Clean and wash the chicken feet. Cut off the tip of the chicken fingers.
    Next, scald the chicken feet. Put the chicken feet in a pot and bring to a boil until foam starts forming on top. Drain the chicken feet under cold water.
    In a clean pot, add the chicken feet, the maize, ginger and water until it covers the maize. Add 1 tsp salt and 1 tbsp sugar.
    Bring the soup to a boil and then lower the heat. Let the soup simmer for about 2 hours or until the soup turns yellow.

You can pair your soup with a few different nutritious side dishes, like sandwiches made with whole-grain bread and lean turkey meat. Grilled vegetables offer another option, or try topping your soup with whole-wheat crackers or homemade croutons. Just bake day-old wheat bread that you’ve brushed with olive oil and seasoned with salt and pepper for about 15 minutes.Get your kids to eat their broccoli without complaining by combining it with cheese and potatoes to make broccoli cheese chowder. Chop 1 large onion, 2 stalks of celery and 1 large carrot, and saute them in 1 tablespoon of olive oil until soft. Add a chopped potato and a couple of minced garlic cloves. Add 1 tablespoon of flour and stir to combine. The flour will help thicken the soup. Add 2 cans of vegetable broth and 8 cups of broccoli crowns -- fresh or frozen. Cook until the potato and broccoli are soft. Transfer to a blender and puree until smooth. Return to the original pot and add in 1 cup of low-fat cheddar. Stir until the cheese melts and season to taste with salt. Each 1-cup serving of chowder has 205 calories, 9 grams of fat and is also a good source of calcium and vitamins A and C.
